Zesty Chicken Garden Salad

Ingredients 

  • 1 pound raw chicken breasts
  • 1 tsp EVOO
  • 5 cups salad greens
  • 1 & 1/3 cups cherry tomatoes, quartered
  • 1 cucumber, sliced
  • 1 shallot, chopped

 Dressing Ingredients

  • 1 Tbs EVOO
  • 1 Tbs lemon juice
  • 2 tsp dijon mustard
  • 1 tsp honey
  • 1 garlic clove, minced
  • 1/4 tsp salt
  • 1/4 tsp basil
  • 1/4 tsp thyme
  • 1/4 tsp oregano

Instructions 

  1. Preheat the oven to 400 °.
  2. In an oven-safe dish, add the chicken breast along with a tsp of EVOO and season with salt and pepper. Cook for 20 minutes.
  3. As the chicken cooks, prepare the salad. To a large bowl, add the lettuce, cherry tomatoes, cucumber, and shallots. Mix well.
  4. Make the dressing. To a small bowl, add the EVOO, lemon juice, dijon mustard, honey, garlic, herbs, and salt. Mix until well combined and pour over the salad. 
  5. Once the chicken is cooked, slice, and serve on top of the salad. Drizzle a Tbs of dressing on top of the chicken, if desired.
