
Zesty Chicken Garden Salad

Ingredients
- 1 pound raw chicken breasts
- 1 tsp EVOO
- 5 cups salad greens
- 1 & 1/3 cups cherry tomatoes, quartered
- 1 cucumber, sliced
- 1 shallot, chopped
Dressing Ingredients
- 1 Tbs EVOO
- 1 Tbs lemon juice
- 2 tsp dijon mustard
- 1 tsp honey
- 1 garlic clove, minced
- 1/4 tsp salt
- 1/4 tsp basil
- 1/4 tsp thyme
- 1/4 tsp oregano
Instructions
- Preheat the oven to 400 °.
- In an oven-safe dish, add the chicken breast along with a tsp of EVOO and season with salt and pepper. Cook for 20 minutes.
- As the chicken cooks, prepare the salad. To a large bowl, add the lettuce, cherry tomatoes, cucumber, and shallots. Mix well.
- Make the dressing. To a small bowl, add the EVOO, lemon juice, dijon mustard, honey, garlic, herbs, and salt. Mix until well combined and pour over the salad.
- Once the chicken is cooked, slice, and serve on top of the salad. Drizzle a Tbs of dressing on top of the chicken, if desired.
