Waldorf Chicken Salad

Ingredients 

  • 2 cups cooked chicken, diced (rotisserie chicken is great, or the Basic Shredded Chicken recipe, page 133)
  • 1/4 cup Greek yogurt
  • 1/3 cup celery, diced
  • 1/3 cup apples, diced
  • 1/3 cup grapes, halved
  • 3 Tbs chopped walnuts
  • 1/2 tsp salt
  • 1 Tbs fresh chopped thyme
  • 1 Tbs honey (optional)

Instructions 

  1. Place all ingredients into a large mixing bowl and stir well to completely combine.
  2. Serve solo, over greens, or use grain free chips or crackers to scoop!
