
Tropical Chicken Mango Salad

Ingredients
- 2 cups mixed greens
- 3 cups cooked chicken breast, shredded - See Chicken Recipe, page 133
- 1 mango, cubed
- 1 large red pepper, chopped
- 1/2 cup cabbage, grated
- 1 large carrot, grated
Dressing Ingredients
- 1 Tbs rice vinegar
- 2 Tbs soy sauce or coconut aminos
- 1 Tbs sesame oil
- 2 garlic cloves, minced
- 2 tsp honey
- 1 tsp fresh ginger, grated
- 1 Tbs peanut butter
Instructions
- Prepare the salad. In a large bowl, combine the mixed greens, shredded chicken, mango, red pepper, cabbage, and carrot. Toss together until well mixed.
- Prepare the sauce. In a separate bowl, add the rice vinegar, soy sauce or coconut aminos, sesame oil, garlic, honey, ginger, and peanut butter. Whisk to combine.
- Combine and serve. Pour the sauce over the salad and toss to ensure all ingredients are coated. Split into 3 servings.
