Tropical Chicken Mango Salad

Ingredients 

  • 2 cups mixed greens
  • 3 cups cooked chicken breast, shredded - See Chicken Recipe, page 133
  • 1 mango, cubed
  • 1 large red pepper, chopped
  • 1/2 cup cabbage, grated
  • 1 large carrot, grated

 Dressing Ingredients

  • 1 Tbs rice vinegar
  • 2 Tbs soy sauce or coconut aminos
  • 1 Tbs sesame oil
  • 2 garlic cloves, minced
  • 2 tsp honey
  • 1 tsp fresh ginger, grated
  • 1 Tbs peanut butter

Instructions 

  1. Prepare the salad. In a large bowl, combine the mixed greens, shredded chicken, mango, red pepper, cabbage, and carrot. Toss together until well mixed.
  2. Prepare the sauce. In a separate bowl, add the rice vinegar, soy sauce or coconut aminos, sesame oil, garlic, honey, ginger, and peanut butter. Whisk to combine.
  3. Combine and serve. Pour the sauce over the salad and toss to ensure all ingredients are coated. Split into 3 servings.
