Thai Prawn Salad

Ingredients 

  • 1 medium carrot
  • 1/4 red cabbage
  • 1 small zuchinni
  • 1 handful spinach
  • 3/4 cup corn
  • 1 pound cooked shrimp - See Basic Seasoning & Shrimp Recipe

 Dressing Ingredients

  • 1 Tbs sesame oil
  • 1 Tbs fish sauce
  • 2 Tbs lime juice
  • 1 Tbs honey
  • 1 garlic clove, minced
  • 1 pinch red pepper flakes

Instructions 

  1. Grate the carrots, red cabbage, and zucchini.
  2. In a large bowl, combine the grated vegetables with the spinach and corn. Toss gently to mix well and distribute evenly 
  3. In a separate medium bowl, whisk together the sesame oil, fish sauce, lime juice, honey, garlic, and red pepper flakes.
  4. Add the shrimp to the dressing and toss gently. 
  5. Pour the shrimp and any extra dressing over the vegetables and gently toss everything to combine.
