Ingredients
- 1 medium carrot
- 1/4 red cabbage
- 1 small zuchinni
- 1 handful spinach
- 3/4 cup corn
- 1 pound cooked shrimp - See Basic Seasoning & Shrimp Recipe
Dressing Ingredients
- 1 Tbs sesame oil
- 1 Tbs fish sauce
- 2 Tbs lime juice
- 1 Tbs honey
- 1 garlic clove, minced
- 1 pinch red pepper flakes
Instructions
- Grate the carrots, red cabbage, and zucchini.
- In a large bowl, combine the grated vegetables with the spinach and corn. Toss gently to mix well and distribute evenly
- In a separate medium bowl, whisk together the sesame oil, fish sauce, lime juice, honey, garlic, and red pepper flakes.
- Add the shrimp to the dressing and toss gently.
- Pour the shrimp and any extra dressing over the vegetables and gently toss everything to combine.
