
Sweet Potato Hash

Ingredients
- 1 medium sweet potato, cubed
- 2 oz lean ground turkey
- 1/2 tsp paprika
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 1/4 tsp oregano
- 1 tsp red wine vinegar
- pepper, to taste
- 2 eggs
Instructions
- Bring a pot of water to a boil. Add the cubed sweet potato and cook for 3-5 minutes until you can pierce the cubes with a fork
- As that sweet potato boils, bring a pan to medium heat. Add the ground turkey and spices and cook until browned, about five minutes.
- Once the sweet potato is ready, drain the water and add the sweet potato to the pan. Mix well and continue to cook for 2 to 3 minutes, stirring regularly. Add in the red wine vinegar.
- Finally, create some space in the middle of the pan by moving the sweet potato mixture with a spoon. Crack the eggs into the middle of the pan and cover with a lid until cooked, about 5-7 minutes.
- You can choose to serve directly from the pan or simply transfer the mixture to a bowl.
