Sweet Potato Hash

Ingredients

  • 1 medium sweet potato, cubed
  • 2 oz lean ground turkey
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 1/4 tsp oregano
  • 1 tsp red wine vinegar
  • pepper, to taste
  • 2 eggs

Instructions

  1. Bring a pot of water to a boil. Add the cubed sweet potato and cook for 3-5 minutes until you can pierce the cubes with a fork
  2.  As that sweet potato boils, bring a pan to medium heat. Add the ground turkey and spices and cook until browned, about five minutes.
  3.  Once the sweet potato is ready, drain the water and add the sweet potato to the pan. Mix well and continue to cook for 2 to 3 minutes, stirring regularly. Add in the red wine vinegar.
  4.  Finally, create some space in the middle of the pan by moving the sweet potato mixture with a spoon. Crack the eggs into the middle of the pan and cover with a lid until cooked, about 5-7 minutes.
  5.  You can choose to serve directly from the pan or simply transfer the mixture to a bowl.
