
Sweet & Sour Pork Stir Fry

Ingredients
- 2 cups basmati rice
- 1 pound pork loin, sliced (can also sub sliced chicken)
- 1 Tbs cooking oil or fat
- 2 garlic cloves, finely chopped
- 1 Tbs ginger, minced
- 2 Tbs honey
- 1 lime, juiced
- 1 cup sugar snap peas
- 1 cup cherry tomatoes
- 1 cup pineapple, canned or fresh
- 4 green onions, sliced
Instructions
- Cook the rice according to the instructions on the packaging.
- Heat the oil in a wok or pan on high heat. Add the pork, garlic, ginger, honey, and lime juice and season with salt. Stir fry for 2 minutes, then lower the heat and add in sugar snap peas. Stir fry for another 4 minutes on low heat.
- Add tomatoes and pineapple and stir fry for another 4 minutes. Remove from heat.
- Serve over rice and sprinkle with green onions.
