Sweet & Sour Pork Stir Fry

Ingredients 

  • 2 cups basmati rice
  • 1 pound pork loin, sliced (can also sub sliced chicken)
  • 1 Tbs cooking oil or fat
  • 2 garlic cloves, finely chopped
  • 1 Tbs ginger, minced
  • 2 Tbs honey
  • 1 lime, juiced
  • 1 cup sugar snap peas
  • 1 cup cherry tomatoes
  • 1 cup pineapple, canned or fresh
  • 4 green onions, sliced

Instructions 

  1. Cook the rice according to the instructions on the packaging.
  2. Heat the oil in a wok or pan on high heat. Add the pork, garlic, ginger, honey, and lime juice and season with salt. Stir fry for 2 minutes, then lower the heat and add in sugar snap peas. Stir fry for another 4 minutes on low heat.
  3. Add tomatoes and pineapple and stir fry for another 4 minutes. Remove from heat.
  4. Serve over rice and sprinkle with green onions.
