Spicy Greek Salad

Ingredients 

  • 2 cups raw chicken breast
  • 1 tsp cooking oil or fat
  • 1 tsp paprika
  • 1 tsp oregano
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste
  • 5 cups lettuce, chopped
  • 14 cherry tomatoes, quartered
  • 1/2 small red onion, sliced
  • 1 medium red pepper, chopped
  • 2 Tbs feta cheese, crumbled

 Dressing Ingredients

  • 3/4 cup Greek yogurt
  • 2 Tbs sriracha
  • 3 garlic cloves, minced
  • Juice from 1 lemon
  • 1 Tbs fresh dill, chopped
  • Salt and pepper to taste

Instructions 

  1. Dice the chicken. Season it with garlic powder, paprika, oregano, salt and pepper. Heat cooking oil or fat over medium heat. When the oil is shimmering, add the chicken and cook 5-7 minutes per side, or until it is golden brown and cooked through. 
  2. As the chicken cooks, prepare the salad. In a large mixing bowl, combine the lettuce, cherry tomatoes, red onion, bell pepper, and crumbled feta cheese.
  3. In a separate small bowl, mix together the Greek yogurt, sriracha, garlic, lemon juice, salt, pepper, and dill. Whisk until the dressing is well blended and creamy. 
  4. Once the chicken is cooked, add it to the salad mixture in the bowl. Toss everything together, ensuring the chicken is easily distributed.
  5. Pour the dressing over the salad. Toss to ensure all ingredients are coated.
