Ingredients
- 1 medium sweet potato, cubed
- 2 tsp cooking oil or fat
- 1 cup spring mix salad
- 1 cup arugula
- 1 cup spinach
- 2 cups cooked chicken
- 10 cherry tomatoes, quartered
- 1/4 cup red onion, sliced
- 1 medium red bell pepper, chopped
- 1 lime, juiced
- 2 Tbs feta cheese, crumbled
Dressing Ingredients
- 1 Tbs Greek yogurt
- 2 tsp dijon mustard
- 1 tsp EVOO
- 1 tsp paprika (can use 1/2 tsp paprika, 1/2 tsp smoked paprika for more smoky flavor)
Instructions
- Preheat the oven to 400°.
- Place cubed sweet potato on baking sheet and drizzle olive oil. Bake in the oven for 20 minutes, or until piercable with a fork.
- In a large bowl, combine the cooked sweet potato, salad greens, cooked chicken, cherry tomatoes, red pepper, sweet potato and red onion. Gently toss together to distribute ingredients evenly.
- In a separate small bowl, whisk together the Greek yogurt, dijon mustard, EVOO, lime juice, and a hint of paprika. Mix until the dressing is smooth and well combined.
- Drizzle the zesty dressing over the salad ingredients in the bowl. Use a spoon or tongs to toss the salad, ensuring all the components are coated with the creamy dressing.
- Sprinkle with crumbled feta and serve.
