Smokey Chicken Salad

Ingredients 

  • 1 medium sweet potato, cubed 
  • 2 tsp cooking oil or fat
  • 1 cup spring mix salad
  • 1 cup arugula
  • 1 cup spinach
  • 2 cups cooked chicken
  • 10 cherry tomatoes, quartered
  • 1/4 cup red onion, sliced
  • 1 medium red bell pepper, chopped
  • 1 lime, juiced
  • 2 Tbs feta cheese, crumbled

 Dressing Ingredients

  • 1 Tbs Greek yogurt
  • 2 tsp dijon mustard
  • 1 tsp EVOO
  • 1 tsp paprika (can use 1/2 tsp paprika, 1/2 tsp smoked paprika for more smoky flavor)

Instructions 

  1. Preheat the oven to 400°. 
  2. Place cubed sweet potato on baking sheet and drizzle olive oil. Bake in the oven for 20 minutes, or until piercable with a fork.
  3. In a large bowl, combine the cooked sweet potato, salad greens, cooked chicken, cherry tomatoes, red pepper, sweet potato and red onion. Gently toss together to distribute ingredients evenly. 
  4. In a separate small bowl, whisk together the Greek yogurt, dijon mustard, EVOO, lime juice, and a hint of paprika. Mix until the dressing is smooth and well combined.
  5. Drizzle the zesty dressing over the salad ingredients in the bowl. Use a spoon or tongs to toss the salad, ensuring all the components are coated with the creamy dressing. 
  6.  Sprinkle with crumbled feta and serve.
