Slow Cooker Fajita Chicken (Macro Perfect Variation)

Ingredients

  • 4 bell peppers (any color), sliced
  • 1 red onion, sliced
  • 2 lbs chicken breasts
  • 2 Tbs honey
  • 1 Tbs EVOO
  • 1 lime, juiced
  • 1 Tbs chili powder
  • 1 Tbs cumin
  • 1 Tbs paprika
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 cup chopped tomatoes
  • cilantro for garnish

Instructions 

  1. Place half of the sliced peppers and onion in the slow cooker. Layer the chicken and coat with honey, EVOO, lime juice, all the seasonings, and chopped tomatoes.
  2. Add the remaining peppers and onions and slow cook for 4 hours on high (or cook in the Instant Pot for 25 minutes at high pressure).
  3. Remove the chicken and shred it with a fork. Add the chicken back in with other ingredients, and mix to combine.
  4. Serve with cilantro on top.
