Ingredients
- 4 bell peppers (any color), sliced
- 1 red onion, sliced
- 2 lbs chicken breasts
- 2 Tbs honey
- 1 Tbs EVOO
- 1 lime, juiced
- 1 Tbs chili powder
- 1 Tbs cumin
- 1 Tbs paprika
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 cup chopped tomatoes
- cilantro for garnish
Instructions
- Place half of the sliced peppers and onion in the slow cooker. Layer the chicken and coat with honey, EVOO, lime juice, all the seasonings, and chopped tomatoes.
- Add the remaining peppers and onions and slow cook for 4 hours on high (or cook in the Instant Pot for 25 minutes at high pressure).
- Remove the chicken and shred it with a fork. Add the chicken back in with other ingredients, and mix to combine.
- Serve with cilantro on top.
