Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 Tbs olive oil
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp chili flakes (optional)
- Salt and pepper to taste
- 1 large bell pepper, cut into 1-inch pieces
- 1 medium-sized zucchini, sliced into 1/2-inch rounds
- 1 red onion, cut into 1-inch pieces
- 8 skewers (if using wooden skewers, soak in water for at least 30 minutes to prevent burning)
Instructions
- Marinate the Shrimp: In a large bowl, combine the shrimp with olive oil, minced garlic, paprika, chili flakes (if using), salt, and pepper. Toss until the shrimp are evenly coated. Let marinate for 15-30 minutes in the refrigerator.
- Preheat the Grill: Preheat your grill to medium-high heat.
- Assemble the Kebabs: Thread the marinated shrimp onto skewers, alternating with pieces of bell pepper, zucchini, and red onion. Ensure not to pack them too tightly to allow even cooking.
- Grill: Place the skewers on the grill. Cook for 2-3 minutes on each side or until the shrimp are opaque and vegetables are slightly charred, turning once.
- Serve: Remove from the grill and serve your shrimp kebabs immediately. They're great on their own or with a side of rice or salad.
