Ingredients 

  • 1 lb large shrimp, peeled and deveined 
  • 1 Tbs olive oil 
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp chili flakes (optional)
  • Salt and pepper to taste
  • 1 large bell pepper, cut into 1-inch pieces 
  • 1 medium-sized zucchini, sliced into 1/2-inch rounds 
  • 1 red onion, cut into 1-inch pieces 
  • 8 skewers (if using wooden skewers, soak in water for at least 30 minutes to prevent burning)

Instructions 

  1. Marinate the Shrimp: In a large bowl, combine the shrimp with olive oil, minced garlic, paprika, chili flakes (if using), salt, and pepper. Toss until the shrimp are evenly coated. Let marinate for 15-30 minutes in the refrigerator.
  2. Preheat the Grill: Preheat your grill to medium-high heat.
  3. Assemble the Kebabs: Thread the marinated shrimp onto skewers, alternating with pieces of bell pepper, zucchini, and red onion. Ensure not to pack them too tightly to allow even cooking.
  4. Grill: Place the skewers on the grill. Cook for 2-3 minutes on each side or until the shrimp are opaque and vegetables are slightly charred, turning once.
  5. Serve: Remove from the grill and serve your shrimp kebabs immediately. They're great on their own or with a side of rice or salad.
