Ingredients 

Sweet Potato Topping

  • 5 large sweet potatoes, peeled and cubed
  • 1 tsp cooking oil or fat of choice
  • 1/2 tsp cinnamon
  • 1/2 tsp chili powder
  • 1/2 tsp salt 

 Filling

  • 1.5 lbs lean ground beef
  • 1 tsp cooking oil or fat of choice
  • 1 onion, diced
  • 4 carrots, diced
  • 1 cup mushroom, diced
  • 1 red bell pepper, diced
  • 6 cloves garlic, minced
  • 6 oz tomato paste
  • 2 tsp chili powder
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup water or broth

Instructions

  1. Preheat oven to 375°.
  2. Grease a 9x13 baking dish.
  3. To prepare the sweet potatoes, bring a large pot of water to boiling. Add in sweet potatoes and cook for 15-20 minutes, or until piercable with a fork. Once done, add in fat and spices and blend or mash together.
  4. While the sweet potatoes are cooking, heat cooking oil or fat in a large skillet over medium-high heat. Add onions and carrots and cook until starting to soften.
  5. Add in mushrooms, bell pepper, and garlic. Cook for another 3-5 minutes.
  6. Add in the ground beef and remaining spices - chili powder, rosemary, salt, and pepper.
  7. Once the beef is cooked through, add in tomato paste and water/broth. Mix until all ingredients are evenly coated. 
  8. Transfer filling into the baking dish and top with sweet potato mash.
  9. Cook in the oven for 10-15 minutes until the sweet potatoes begin to bubble and brown.
  10. Let cool slightly before serving.
