Ingredients
Sweet Potato Topping
- 5 large sweet potatoes, peeled and cubed
- 1 tsp cooking oil or fat of choice
- 1/2 tsp cinnamon
- 1/2 tsp chili powder
- 1/2 tsp salt
Filling
- 1.5 lbs lean ground beef
- 1 tsp cooking oil or fat of choice
- 1 onion, diced
- 4 carrots, diced
- 1 cup mushroom, diced
- 1 red bell pepper, diced
- 6 cloves garlic, minced
- 6 oz tomato paste
- 2 tsp chili powder
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup water or broth
Instructions
- Preheat oven to 375°.
- Grease a 9x13 baking dish.
- To prepare the sweet potatoes, bring a large pot of water to boiling. Add in sweet potatoes and cook for 15-20 minutes, or until piercable with a fork. Once done, add in fat and spices and blend or mash together.
- While the sweet potatoes are cooking, heat cooking oil or fat in a large skillet over medium-high heat. Add onions and carrots and cook until starting to soften.
- Add in mushrooms, bell pepper, and garlic. Cook for another 3-5 minutes.
- Add in the ground beef and remaining spices - chili powder, rosemary, salt, and pepper.
- Once the beef is cooked through, add in tomato paste and water/broth. Mix until all ingredients are evenly coated.
- Transfer filling into the baking dish and top with sweet potato mash.
- Cook in the oven for 10-15 minutes until the sweet potatoes begin to bubble and brown.
- Let cool slightly before serving.
