Ingredients
- 1 lbs ground turkey
- 4 large carrot, diced
- 2 medium zucchinis, diced
- 1 red onion, diced
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeno, diced
- 2 tomatoes, diced
- 2 Tbs tomato paste
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp oregano
- 1 (16-oz) jar of salsa
- 1 (15-oz) can of black beans
- 1 cup chicken broth
Optional garnish (not included in nutrition counts): green onions and avocado
Instructions
- Add turkey to the slow cooker. Then, add carrots, zucchini, red onion, garlic, bell peppers, jalapeños, tomatoes, tomato paste, salt, pepper, cumin, chili powder, and oregano.
- Use a wooden spoon to stir it all up, making sure it is well mixed and the turkey is broken up.
- Add the jar of salsa and chicken broth.
- Stir again to combine.
- Set slow cooker on low for 5 to 6 hours of until turkey is cooked through.
- Adjust salt and pepper to taste.
