Ingredients
- 3 lbs chuck roast
- 2 Tbs roasted and ground cacao beans, preferably the “Choffy” brand
- 1 tsp salt
- 1 tsp pepper
- 1 tsp coconut sugar or honey
- 1 tsp garlic powder
- 1/2 tsp chili powder
- 1/2 tsp dried oregano
- 1 Tbs cooking oil or fat
- 1 onion, sliced
- 1 cup beef broth
Instructions
- In a small bowl, combine the ground cacao beans, sea salt, black pepper, coconut sugar or honey, garlic powder, chili powder, and dried oregano.
- Rub the spice mixture all over the chuck roast.
- Heat a heavy bottomed pan over medium heat, add the cooking oil or fat. Sear the roast on each side until you see a nice crust. This will take 2-3 minutes per side.
- Move the roast to the slow cooker.
- Add the onions (if you have time, you can sauté the onions in cooking oil for a few minutes before adding them) to the slow cooker.
- Add the beef broth and cook on low for 8 hours.
- Adjust salt and pepper to taste.
