Ingredients 

  • 1 medium parsnip
  • 1 medium carrot
  • 1 small beet
  • 1 medium sweet potato
  • 1 small red onion
  • 1 tsp cooking oil or fat
  • 1 pinch black pepper
  • 1 pinch salt
  • 1 tsp fresh or dried rosemary

Instructions 

  1. Preheat oven or air fryer to 400°. 
  2. Place the vegetables on a baking sheet. Drizzle cooking oil or fat over veggies and add seasonings. Mix well.
  3. Place the tray in the oven and cook for 30-40 minutes.
