Ingredients
- 3 bell peppers, any color, chopped
- 1 cup cherry tomatoes, whole
- 1 large zucchini, cubed
- 1 medium eggplant, cubed
- 1 large red onion, roughly chopped
- 4 cloves garlic, minced
- 4 medium-sized potatoes, cubed
- 1 pinch salt
- 1 pinch black pepper
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp cooking oil or fat
Instructions
- Preheat oven to 350°.
- Place all veggies on baking sheet. Spinkle seasonings and cooking oil or fat over the veggies and mix.
- Cook for 50 minutes, tossing half way through to ensure even cooking.
