Ingredients 

  • 3 bell peppers, any color, chopped
  • 1 cup cherry tomatoes, whole
  • 1 large zucchini, cubed
  • 1 medium eggplant, cubed
  • 1 large red onion, roughly chopped
  • 4 cloves garlic, minced
  • 4 medium-sized potatoes, cubed
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp cooking oil or fat

Instructions 

  1. Preheat oven to 350°. 
  2. Place all veggies on baking sheet. Spinkle seasonings and cooking oil or fat over the veggies and mix.
  3. Cook for 50 minutes, tossing half way through to ensure even cooking.
