
Pork & Pineapple Stir Fry

Ingredients
- 1 Tbs cooking oil or fat
- 1 red bell pepper, sliced into strips
- 1/2 onion, sliced
- 2 garlic cloves, minced
- 1/2 chili pepper, seeds removed, finely
- chopped
- 1-inch ginger knob, grated
- 1 lb ground pork or pork tenderloin, thinly sliced
- 2 cups white rice
- 2/3 cup pineapple chunks, in juice (use the juice for the recipe sauce)
- 2 green onions, chopped
Sauce
- 1/3 cup pineapple juice from can
- 5 Tbs soy sauce or coconut aminos
- 3 Tbs rice vinegar
Instructions
- Cook rice according to instructions.
- Whisk all sauce ingredients together in a bowl. Set aside.
- In a wok or large pan, heat 1 Tbs of cooking oil or fat and stir fry the bell pepper, onion, garlic, chili, and ginger over high heat for about 3 minutes. Add the drained pineapple and fry together for another 2 minutes, then transfer everything onto a plate.
- Add a second Tbs of cooking oil or fat to the pan and cook pork on high heat until cooked through.
- Put the vegetables back into the pan with the meat and mix, then add the sauce. Cook everything together over high heat, stirring occasionally, for about 2 minutes until sauce thickens.
- Remove from heat, sprinkle with chopped green onions, and serve with rice.
