Pork & Pineapple Stir Fry

Ingredients 

  • 1 Tbs cooking oil or fat
  • 1 red bell pepper, sliced into strips
  • 1/2 onion, sliced
  • 2 garlic cloves, minced
  • 1/2 chili pepper, seeds removed, finely 
  •  chopped
  • 1-inch ginger knob, grated
  • 1 lb ground pork or pork tenderloin, thinly sliced
  • 2 cups white rice
  • 2/3 cup pineapple chunks, in juice (use the juice for the recipe sauce)
  • 2 green onions, chopped

 Sauce

  • 1/3 cup pineapple juice from can
  • 5 Tbs soy sauce or coconut aminos
  • 3 Tbs rice vinegar

Instructions 

  1. Cook rice according to instructions.
  2. Whisk all sauce ingredients together in a bowl. Set aside. 
  3. In a wok or large pan, heat 1 Tbs of cooking oil or fat and stir fry the bell pepper, onion, garlic, chili, and ginger over high heat for about 3 minutes. Add the drained pineapple and fry together for another 2 minutes, then transfer everything onto a plate.
  4. Add a second Tbs of cooking oil or fat to the pan and cook pork on high heat until cooked through.
  5. Put the vegetables back into the pan with the meat and mix, then add the sauce. Cook everything together over high heat, stirring occasionally, for about 2 minutes until sauce thickens.
  6. Remove from heat, sprinkle with chopped green onions, and serve with rice.
