Orange-Style Chicken Stir Fry

Ingredients 

Sauce Ingredients

  • 2 oranges, juiced
  • 1/4 cup honey
  • 1/4 cup soy sauce or coconut aminos
  • 1 tsp sriracha, or to taste

 Stir Fry Ingredients

  • 2 Tbs cooking oil or fat
  • 1 lb raw chicken breast, chopped
  • 1 Tbs garlic, minced
  • 3 sprigs green onion, chopped
  • 1 cup snap peas
  • 1/2 red bell pepper, chopped
  • 2 cups cooked rice
  • 1/2 cup carrot, grated
  • 1 Tbs sesame seeds
  • 1 tsp orange zest

Instructions 

  1. Mix all the sauce ingredients together, adding some water to thin slightly, if desired.
  2. Heat oil in a large pan over high heat. Add in the chicken breasts and cook for 4-5 minutes per side until chicken is cooked through. Remove from pan and set aside.
  3. Lower the heat and add the garlic and green onions, cooking for 1 minute. Keep stirring to prevent burning. Add peas and bell pepper and cook for another 3-4 minutes.
  4. Add in cooked rice and mix well with the vegetables. 
  5. Add in the cooked chicken, grated carrots and sauce. Stir well.
  6. Garnish with more green onions, if desired and serve.
