
Orange-Style Chicken Stir Fry

Ingredients
Sauce Ingredients
- 2 oranges, juiced
- 1/4 cup honey
- 1/4 cup soy sauce or coconut aminos
- 1 tsp sriracha, or to taste
Stir Fry Ingredients
- 2 Tbs cooking oil or fat
- 1 lb raw chicken breast, chopped
- 1 Tbs garlic, minced
- 3 sprigs green onion, chopped
- 1 cup snap peas
- 1/2 red bell pepper, chopped
- 2 cups cooked rice
- 1/2 cup carrot, grated
- 1 Tbs sesame seeds
- 1 tsp orange zest
Instructions
- Mix all the sauce ingredients together, adding some water to thin slightly, if desired.
- Heat oil in a large pan over high heat. Add in the chicken breasts and cook for 4-5 minutes per side until chicken is cooked through. Remove from pan and set aside.
- Lower the heat and add the garlic and green onions, cooking for 1 minute. Keep stirring to prevent burning. Add peas and bell pepper and cook for another 3-4 minutes.
- Add in cooked rice and mix well with the vegetables.
- Add in the cooked chicken, grated carrots and sauce. Stir well.
- Garnish with more green onions, if desired and serve.
