Nutty Delight Flapjacks

Ingredients 

  • 1/2 cup honey
  • 1/3 cup EVOO
  • 1/3 cup peanut butter
  • 1 rounded cup oats
  • 1/3 cup peanuts, crushed
  • 1/3 cup hazelnuts, crushed
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds

Instructions 

  1.  Preheat the oven to 350°. Link an 8x8 baking pan with parchment paper.
  2.  In a small pot, combine honey, EVOO, and peanut butter and heat over low heat until melted. 
  3.  Once combined, take off the heat. In a large bowl, mix the melted mixture with the oats, peanuts, hazelnuts, pumpkin seeds, and sunflower seeds until well combined.
  4.  Pour the mixture into the parchment-paper lined baking pan. Press the mixture down firmly to flatten.
  5. Bake in the oven for 25 minutes. Once cooked, leave to cool before chopping into 12 even pieces.
