Ingredients 

  • 1 lb baby potatoes, washed, dried, and halved
  • 5 garlic cloves
  • 4 tsp dijon mustard
  • 2 tsp EVOO
  •  2 tsp fresh rosemary, chopped (or 1 tsp dried)
  • 2 tsp fresh thyme (or 3/4 tsp dried)

Instructions 

  1. Preheat oven to 400°. 
  2. Place the halved potatoes in a mixing bowl and add all ingredients. Mix well before transferring the potatoes to a baking sheet.
  3. Place the potatoes in the oven and cook for 30-35 minutes.
