Ingredients
- 1 lb baby potatoes, washed, dried, and halved
- 5 garlic cloves
- 4 tsp dijon mustard
- 2 tsp EVOO
- 2 tsp fresh rosemary, chopped (or 1 tsp dried)
- 2 tsp fresh thyme (or 3/4 tsp dried)
Instructions
- Preheat oven to 400°.
- Place the halved potatoes in a mixing bowl and add all ingredients. Mix well before transferring the potatoes to a baking sheet.
- Place the potatoes in the oven and cook for 30-35 minutes.
