Ingredients
Salmon
- 1 lb salmon filet, patted dry
- 1/2 Tbs EVOO
- 2 cloves garlic, minced
- 1/4 tsp salt
- cracked black pepper, to taste
- 2 lemons, thinly sliced
Mediterranean Topping
- 1/3 cup sliced black olives
- 1/4 cup crumbled feta
- 1/4 cup red onions, thinly sliced
- 1 cup artichoke hearts
- 1 cup cucumber, chopped
- 1/3 cup sun dried tomatoes, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup balsamic dressing - See Balsamic Dressing Recipe
Instructions
- Preheat oven to 375 °.
- Place salmon filet on a parchment-lined baking sheet.
- Coat salmon with EVOO, minced garlic, salt, and pepper, then top with lemon slices.
- Bake for 13-15 minutes or until desired doneness.
- While salmon is baking, make your Mediterranean topping. In a large bowl, combine black olives, feta, red onions, artichoke hearts, cucumber, sun dried tomatoes, parsley, and balsamic dressing.
- Top salmon with Mediterranean topping.
** To complete macros, serve with 2/3 cup of cooked rice.
