Ingredients 

Salmon

  • 1 lb salmon filet, patted dry
  • 1/2 Tbs EVOO
  • 2 cloves garlic, minced
  • 1/4 tsp salt
  • cracked black pepper, to taste
  • 2 lemons, thinly sliced

Mediterranean Topping

  • 1/3 cup sliced black olives
  • 1/4 cup crumbled feta
  • 1/4 cup red onions, thinly sliced
  • 1 cup artichoke hearts
  • 1 cup cucumber, chopped
  • 1/3 cup sun dried tomatoes, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup balsamic dressing - See Balsamic Dressing Recipe

Instructions 

  1. Preheat oven to 375 °.
  2. Place salmon filet on a parchment-lined baking sheet.
  3. Coat salmon with EVOO, minced garlic, salt, and pepper, then top with lemon slices.
  4. Bake for 13-15 minutes or until desired doneness.
  5. While salmon is baking, make your Mediterranean topping. In a large bowl, combine black olives, feta, red onions, artichoke hearts, cucumber, sun dried tomatoes, parsley, and balsamic dressing. 
  6. Top salmon with Mediterranean topping.

** To complete macros, serve with 2/3 cup of cooked rice.
