Mediterranean Salad Bowl

Ingredients 

  • 1/2 cup lentils, cooked according to package directions
  • 2-4 handfuls spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/2 cup roasted red peppers (jarred is easy)
  • 1/2 cup artichoke hearts (jarred is easy)
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/2 cup chickpeas, rinsed and drained
  • 1 Tbs capers 
  • 2 Tbs sunflower seeds
  • Thinly sliced red onion to garnish
  • Fresh chopped parsley and oregano to garnish
  • Salt and pepper to taste

 Recommended Protein: 8oz grilled chicken breast for 2 servings 

Instructions

  1.  Combine all ingredients and toss with Greek variation of apple cider vinaigrette dressing. Top with chicken breast.
