Ingredients
- 1/2 cup lentils, cooked according to package directions
- 2-4 handfuls spinach
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/2 cup roasted red peppers (jarred is easy)
- 1/2 cup artichoke hearts (jarred is easy)
- 1/4 cup Kalamata olives, pitted and halved
- 1/2 cup chickpeas, rinsed and drained
- 1 Tbs capers
- 2 Tbs sunflower seeds
- Thinly sliced red onion to garnish
- Fresh chopped parsley and oregano to garnish
- Salt and pepper to taste
Recommended Protein: 8oz grilled chicken breast for 2 servings
Instructions
- Combine all ingredients and toss with Greek variation of apple cider vinaigrette dressing. Top with chicken breast.
