Macro Perfect Thanksgiving Turkey Meatballs

Ingredients 

  • 1 medium yellow onion, finely diced
  • 4 stalks celery, finely diced
  • 4 cloves garlic, minced
  • 1 Tbs cooking oil or fat
  • 1 lbs ground turkey
  • 3 slices sourdough bread, chopped into small pieces
  • 2 eggs
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 cup dried cranberries

Instructions 

  1. Preheat the oven to 350°. Line a baking sheet with parchment paper, spray with non-stick cooking spray, and set aside.
  2. In a skillet over medium heat, add in the cooking oil. Once hot, add in the onion and celery until they start to soften. Once soft, add in the garlic and cook for another 1-2 minutes. Remove from heat and set aside to cool.
  3. In a large mixing bowl, add in the ground turkey, bread, seasonings, eggs, cranberries and vegetable mixture.
  4. Mix to combine ingredients, without overworking it. Shape in to 2" meatballs. Wet your hands with water to help keep the mixture from sticking to your hands.
  5. Place meatballs on the prepared baking sheet. Spray the meatballs with cooking spray to help with browning.
  6. Cook for 20-23 minutes, or until the internal temperature reaches 165 °. You can also broil for a minute to brown up the tops of the meatballs.
