Macro Perfect Thanksgiving Hash

Ingredients 

  • 4 oz. chopped turkey breast
  • 1 tsp cooking oil or butter
  • 1/2 cup mirepoix (sautéed onion, carrot, celery) 
  • 1/2 cup diced sweet potatoes
  • 1 tsp sage
  • salt and pepper to taste
  • 2 Tbs dried cranberries 
  • 1 Tbs cranberry sauce 
  • 1 Tbs chopped pecans

Instructions

  1. Combine turkey breast, mirepoix, diced sweet potatoes and seasonings in a bowl.
  2. Heat oil in a skillet on medium-high heat, once hot add hash ingredients to the skillet and sauté until everything is cooked through, approximately 7-10 minutes. 
  3. Top with cranberries, cranberry sauce and chopped pecans.
  4. Add more salt and pepper if needed.
