Macro Perfect Taco Hash

Ingredients

  • 3 oz. lean (90%) ground beef 
  • ½ tsp. cooking oil
  • ½ onion, diced
  • 1 clove garlic, diced
  • ¼ cup black beans
  • ½ cup sweet potato, boiled or microwaved until soft (mashed is fine, too)
  • 1-2 tsp. taco seasoning (we like Siete Foods seasoning)

Optional additions for individual servings: poached egg, sour cream, pico/salsa (not counted in calories & macros).

Instructions

  1. Heat oil in a skillet over medium heat. Add onion and cook until soft; then add garlic and cook for 1 additional minute.
  2. Add ground beef to skillet and cook until done.
  3. Add black beans, sweet potato, and taco seasoning and mix well. Cook until heated through. 
  4. Top with optional additions and enjoy!

Notes: you can always up the protein with larger servings of meat!
