
Macro Perfect One Pot Turkey Chili with Rice

Ingredients
- 1 Tbs cooking oil or fat
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 lb ground turkey
- 1 tsp dried oregano
- 1 tsp cumin
- 1 1/2 tsp chili powder
- 1/2 tsp salt
- large pinch ground pepper
- 1/2 cup rice, uncooked
- 1 red bell pepper, chopped
- 1 cup canned red kidney beans, drained
- 1/3 cup canned sweet corn, drained
- 1/2 cup canned chopped tomatoes
- 1 cup chicken broth
Optional toppings (not included in nutrition calculation): shredded cheddar cheese, or Greek yogurt
Instructions
- Heat oil in a large pan and sauté onion and garlic for 3-4 minutes.
- Add the ground turkey, breaking up the meat with the edge of a wooden spoon, until cooked through or no longer pink, about 5 minutes.
- Add spices and stir to combine. Add the uncooked rice and stir again.
- Add the bell pepper, beans, corn, canned tomatoes, and broth. Mix and bring to a boil.
- Simmer, covered, on low heat for 25-30 minutes, or until rice is cooked.
- Serve with cheese and sour cream or Greek yogurt (optional).
