Macro Perfect One Pot Turkey Chili with Rice

Ingredients 

  • 1 Tbs cooking oil or fat
  •  1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 lb ground turkey
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 1 1/2 tsp chili powder
  • 1/2 tsp salt
  • large pinch ground pepper
  • 1/2 cup rice, uncooked
  • 1 red bell pepper, chopped
  • 1 cup canned red kidney beans, drained
  • 1/3 cup canned sweet corn, drained
  • 1/2 cup canned chopped tomatoes
  • 1 cup chicken broth

Optional toppings (not included in nutrition calculation): shredded cheddar cheese, or Greek yogurt

Instructions 

  1. Heat oil in a large pan and sauté onion and garlic for 3-4 minutes.
  2. Add the ground turkey, breaking up the meat with the edge of a wooden spoon, until cooked through or no longer pink, about 5 minutes. 
  3. Add spices and stir to combine. Add the uncooked rice and stir again.
  4. Add the bell pepper, beans, corn, canned tomatoes, and broth. Mix and bring to a boil.
  5. Simmer, covered, on low heat for 25-30 minutes, or until rice is cooked.
  6. Serve with cheese and sour cream or Greek yogurt (optional).
