
Macro Perfect Honey & Lime Glazed Salmon with Pineapple Rice

Ingredients
- 4 salmon fillets (approx 4 oz each)
Marinade
- 1 Tbs honey
- 2 limes, juiced, divided
- 3 Tbs soy sauce or coconut aminos
- 1 Tbs EVOO
- 3 Tbs ginger, grated
- 2 garlic cloves, minced
Pineapple rice
- 2/3 cup uncooked rice
- 3/4 cup canned corn, drained
- 1 cup pineapple, chopped
- 1 cup cucumber, chopped
- 1 lime, juiced
- 1 Tbs honey
- 1/2 cup cilantro, chopped
Instructions
- Preheat the oven to 410°.
- Make the marinade. Mix 1 Tbs honey, 3 Tbs lime juice, soy sauce or coconut aminos, EVOO, ginger, and garlic. Place the pieces of salmon in a casserole dish with marinade and let sit for about 1 hour to marinate.
- Meanwhile, cook the rice according to package instructions. Spread on a large plate to cool.
- Add corn, pineapple, and cucumber to the cooled rice. Add the mixture to a bowl and season with salt, 1 Tbs lime juice, and 1 Tbs honey.
- Bake the marinated salmon for 18 minutes, or until cooked throughout.
- Serve salmon over the prepared pineapple rice and sprinkle with cilantro.
