Macro Perfect Honey & Lime Glazed Salmon with Pineapple Rice

Ingredients 

  • 4 salmon fillets (approx 4 oz each)

Marinade

  • 1 Tbs honey
  • 2 limes, juiced, divided
  • 3 Tbs soy sauce or coconut aminos
  • 1 Tbs EVOO
  • 3 Tbs ginger, grated
  • 2 garlic cloves, minced

Pineapple rice

  • 2/3 cup uncooked rice
  • 3/4 cup canned corn, drained
  • 1 cup pineapple, chopped
  • 1 cup cucumber, chopped
  • 1 lime, juiced
  • 1 Tbs honey
  • 1/2 cup cilantro, chopped

Instructions 

  1. Preheat the oven to 410°.
  2. Make the marinade. Mix 1 Tbs honey, 3 Tbs lime juice, soy sauce or coconut aminos, EVOO, ginger, and garlic. Place the pieces of salmon in a casserole dish with marinade and let sit for about 1 hour to marinate.
  3. Meanwhile, cook the rice according to package instructions. Spread on a large plate to cool.
  4. Add corn, pineapple, and cucumber to the cooled rice. Add the mixture to a bowl and season with salt, 1 Tbs lime juice, and 1 Tbs honey.
  5. Bake the marinated salmon for 18 minutes, or until cooked throughout.
  6. Serve salmon over the prepared pineapple rice and sprinkle with cilantro.
