Ingredients
Meatballs
- 1/2 lb ground pork
- 1/2 lb lean ground beef
- 1/2 tsp ground ginger
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbs coconut aminos
- 2 Tbs crushed pineapple
- 1/4 BBQ sauce
- 1.5 Tbs chopped green onions
- 2 cups cooked white rice
BBQ Dip
- 2/3 cup non fat Greek yogurt
- 1/4 cup chopped green onions
- 2 Tbs BBQ sauce
- 1/4 cup crushed pineapple
Instructions
- Preheat oven to 400 °.
- In a large mixing bowl, combine pork, beef, garlic powder, ginger, salt, pepper,, coconut aminos, crushed pineapple, BBQ sauce, and green onion. Mix until ingredients are well incorporated.
- Line a baking sheet with parchment paper. Place golf ball-sized meatballs on the sheet, placed about 1 inch apart.
- Bake for 20-25 minutes.
- While the meatballs are baking, whip up the dipping sauce by combining the Greek yogurt, green onions, BBQ sauce, and crushed pineapple in a medium-sized bowl
- When the meatballs ar done, serve immediately with the rice and the BBQ dip.
- Store any extra meatballs in the fridge or freezer.
