Ingredients
- 1/2 cup nonfat cottage cheese
- 1 rounded Tbs flour
- 1/4 tsp baking powder
- 2 egg
- 3 Tbs oats
- 1 lemon, zested
- 1/2 tsp vanilla extract
- 1 tsp peanut butter
- 1/2 cup fresh berries
- 1 tsp honey
Instructions
- In a mixing bowl, combine cottage cheese, flour, baking powder, egg, oats, lemon zest, and vanilla extract. Mix until the batter is smooth and ingredients are well-combined.
- Preheat a nonstick skillet over medium heat. You can lightly grease the pan with preferred cooking oil or fat, if desired.
- Pour 1/4 cup of batter into the pan. Let sit until bubbles begin to appear on the surface and the edges look cooked. Carefully flip with a spatula and cook until golden.
- Top you pancake with blueberries and raspberries. Drizzle with 1 tsp honey and peanut butter.
