Macro Perfect Fluffy Cottage Cheese Pancakes

Ingredients 

  • 1/2 cup nonfat cottage cheese
  • 1 rounded Tbs flour
  • 1/4 tsp baking powder
  • 2 egg
  • 3 Tbs oats
  • 1 lemon, zested
  • 1/2 tsp vanilla extract
  • 1 tsp peanut butter
  • 1/2 cup fresh berries
  • 1 tsp honey

Instructions 

  1. In a mixing bowl, combine cottage cheese, flour, baking powder, egg, oats, lemon zest, and vanilla extract. Mix until the batter is smooth and ingredients are well-combined. 
  2. Preheat a nonstick skillet over medium heat. You can lightly grease the pan with preferred cooking oil or fat, if desired.
  3. Pour 1/4 cup of batter into the pan. Let sit until bubbles begin to appear on the surface and the edges look cooked. Carefully flip with a spatula and cook until golden. 
  4. Top you pancake with blueberries and raspberries. Drizzle with 1 tsp honey and peanut butter.
