Ingredients 

  • 1 Tbs cooking oil or fat
  • 1/2 lb chorizo sausage, sliced
  • 1 medium red onion, sliced
  • 1 large red bell pepper, chopped
  • 2 garlic cloves, minced
  • 1 (14.5-oz) can diced tomatoes
  • 1 (15.5-oz) can chickpeas, drained
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes
  • 1 Tbs red pepper hummus
  • 1 cup water
  • small handful arugula
  • 2 Tbs lemon, optional, to taste
  • fresh parsley for garnish

Instructions 

  1. Heat cooking oil or fat in medium-sized pan over medium heat. Add chorizo and cook until browned, then remove from pan, draining excess fat on a paper towel.
  2. In the same pan, saute the onion and red pepper for about 10 minutes. Add in the minced garlic and continue to cook for an additional minute.
  3. Add the tomatoes and cup of water. Add the chickpeas, paprika, red pepper flakes, and hummus. Bring the mixture to a boil, then let simmer for about 10 minutes until it thickens.
  4. Adjust the seasoning to your liking. You might find a squeeze of lemon enhances the flavor.
  5. Stir in the arugula and chopped parsley. Enjoy!
