Ingredients
- 1 Tbs cooking oil or fat
- 1/2 lb chorizo sausage, sliced
- 1 medium red onion, sliced
- 1 large red bell pepper, chopped
- 2 garlic cloves, minced
- 1 (14.5-oz) can diced tomatoes
- 1 (15.5-oz) can chickpeas, drained
- 1 tsp paprika
- 1/2 tsp red pepper flakes
- 1 Tbs red pepper hummus
- 1 cup water
- small handful arugula
- 2 Tbs lemon, optional, to taste
- fresh parsley for garnish
Instructions
- Heat cooking oil or fat in medium-sized pan over medium heat. Add chorizo and cook until browned, then remove from pan, draining excess fat on a paper towel.
- In the same pan, saute the onion and red pepper for about 10 minutes. Add in the minced garlic and continue to cook for an additional minute.
- Add the tomatoes and cup of water. Add the chickpeas, paprika, red pepper flakes, and hummus. Bring the mixture to a boil, then let simmer for about 10 minutes until it thickens.
- Adjust the seasoning to your liking. You might find a squeeze of lemon enhances the flavor.
- Stir in the arugula and chopped parsley. Enjoy!
