
Macro Perfect Carnitas Stuffed Peppers

Ingredients
- 3 cups pulled pork - See Basic Shredded Pork Recipe
- 4 bell peppers, halved and seeds removed
- 1 (15-oz) can fire roasted tomatoes, drained
- 1 jalapeno
- 4 garlic cloves
- 1/2 tsp dried basil
- pinch of salt and pepper
- 1 can black beans
- 1/2 cup shredded sharp cheddar cheese (or cheese of choice)
Optional garnish: fresh chopped parsley, sliced red onion
Instructions
- Preheat the oven to 350°. Line a baking sheet with parchment paper.
- Take the bell pepper halves and place them on the baking sheet, cut side up.
- Make the sauce in a food processor by adding in the fire roasted tomatoes (drained), jalapeno, garlic, dried basil, salt, and pepper. Blend until smooth.
- Fill the peppers with 1 Tbs black beans and about 1/4 - 1/3 cup pulled pork. Drizzle the sauce on top of the pork and top with a sprinkle of cheese.
- Bake for 20-25 minutes, or until the cheese is starting to bubble and turn golden.
- Garnish with parsley and red onion.
