Macro Perfect Carnitas Stuffed Peppers

Ingredients

  • 3 cups pulled pork - See Basic Shredded Pork Recipe
  • 4 bell peppers, halved and seeds removed
  • 1 (15-oz) can fire roasted tomatoes, drained
  • 1 jalapeno
  • 4 garlic cloves
  • 1/2 tsp dried basil
  • pinch of salt and pepper
  • 1 can black beans
  • 1/2 cup shredded sharp cheddar cheese (or cheese of choice)

Optional garnish: fresh chopped parsley, sliced red onion

Instructions

  1. Preheat the oven to 350°. Line a baking sheet with parchment paper. 
  2. Take the bell pepper halves and place them on the baking sheet, cut side up.
  3. Make the sauce in a food processor by adding in the fire roasted tomatoes (drained), jalapeno, garlic, dried basil, salt, and pepper. Blend until smooth.
  4. Fill the peppers with 1 Tbs black beans and about 1/4 - 1/3 cup pulled pork. Drizzle the sauce on top of the pork and top with a sprinkle of cheese.
  5. Bake for 20-25 minutes, or until the cheese is starting to bubble and turn golden.
  6. Garnish with parsley and red onion.
