Ingredients 

  • 1/2 Tbs cooking oil or fat
  • 3 large carrots, sliced
  • 2 bell peppers, sliced
  • 4 green onions, sliced, green and white parts divided
  • 1 lb lean ground beef
  • 2 tsp Cajun seasoning
  • 1 Tbs tomato paste
  • 4 Tbs water
  • 3 cups cooked rice
  • salt and pepper, to taste

Instructions 

  1. Heat cooking oil or fat in a large pan over medium heat. Add the carrots, peppers, and white parts of the green onion. Sauté for 10 minutes until the vegetables start to soften.
  2. Add in the ground beef and season with salt and pepper. Cook for 10 minutes, breaking up the beef with the back of a wooden spoon, until the meat is browned.
  3. Add in the Cajun seasoning and tomato paste and stir well. Add in the cooked rice along with 4 Tbs water.
  4. Stir well to combine all of the ingredients and continue cooking for about 3-4 minutes.
  5. Sprinkle with the green parts of the green onions and serve.
