Ingredients
- 1/2 Tbs cooking oil or fat
- 3 large carrots, sliced
- 2 bell peppers, sliced
- 4 green onions, sliced, green and white parts divided
- 1 lb lean ground beef
- 2 tsp Cajun seasoning
- 1 Tbs tomato paste
- 4 Tbs water
- 3 cups cooked rice
- salt and pepper, to taste
Instructions
- Heat cooking oil or fat in a large pan over medium heat. Add the carrots, peppers, and white parts of the green onion. Sauté for 10 minutes until the vegetables start to soften.
- Add in the ground beef and season with salt and pepper. Cook for 10 minutes, breaking up the beef with the back of a wooden spoon, until the meat is browned.
- Add in the Cajun seasoning and tomato paste and stir well. Add in the cooked rice along with 4 Tbs water.
- Stir well to combine all of the ingredients and continue cooking for about 3-4 minutes.
- Sprinkle with the green parts of the green onions and serve.
