Ingredients

Pork Tenderloin

  •  1 1/2 lbs pork tenderloin
  • 1 tbs avocado oil

Marinade

  • 2 tbs avocado oil
  • 3 tbs rice vinegar
  • 3 tbs coconut aminos
  • 1 cup basil leaves
  • 1 large garlic clove
  • 1 tbs pure maple syrup
  • 1/4 tsp salt

Maple Roasted Sweet Potatoes 

  • 2 1/2 lbs sweet potatoes, peeled and cut into 1 1/2 inch pieces
  • 1/4 cup maple syrup
  • 2 tbs butter, melted
  • 1 tbs lemon juice
  • 1/2 tsp salt
  • Freshly ground black pepper
  • 1/2 tsp garlic powder

Braised Greens 

  • 24 oz assorted greens, like kale, collard, swiss chard
  •  1 tsp olive oil
  • 1 large garlic clove, chopped
  • 1 tbs white wine
  • 1/4 tsp hot red pepper flakes

Instructions 

Pork Tenderloin

  • Preheat the oven to 400° F. with the rack in the middle.
  • Trim tenderloin of fat and any silver skin and pat dry with a paper towel.
  • Take remaining ingredients for the marinade and place in a small blender and blend until smooth.
  • Pierce your tenderloin all over with a fork and put in a bag or deep dish for marinating.
  • Reserve 1⁄4 cup of marinade and pour the rest over the pork tenderloin, submerging it thoroughly. Refrigerate at least 1 hour (up to 8) for best results. (Tenderloin needs to be brought to room temperature before cooking.)
  • In a large oven-safe pan (cast iron or dutch oven will work), heat 1 tbs avocado oil over medium-high heat. Once oil is hot, remove pork from marinade and brown on all sides.
  • Place in the oven and bake uncovered at 400° F. for 13-15 minutes, flipping the tenderloin over halfway through baking and brushing with some of the reserved marinade. Bake until the center of the pork registers at least 150° F then transfer to a cutting board and let meat rest 5-10 minutes
  • Slice into serving portions and drizzle with remaining marinade reserve.

Maple Roasted Sweet Potatoes 

  •  Preheat oven to 400° F.
  • Arrange sweet potatoes in an even layer on a parchment lined baking sheet.
  • Combine maple syrup, butter, lemon juice, salt, pepper, and garlic powder in a small bowl. Pour the mixture over the sweet potatoes, tossing to thoroughly coat.
  • Cover and bake the sweet potatoes for 15 minutes. Uncover, stir and cook, stirring every 15 minutes, until tender and starting to brown, 45-50 minutes.

Braised Greens

  • Wash the greens and remove tough stems, Cut or break greens into 2-inch pieces.
  • Heat a nonstick pan over medium heat, add oil and saute the garlic for 30 seconds, makin sure not to burn. Add the greens, and saute for 1 minute.
  • Stir in the stock, white wine, and hot pepper flakes; cover, and cook 8-10 minutes, until the greens are soft.
