Ingredients

  • 2 hake fillets (approx 4 oz each)
  • 1 tsp cooking oil or fat
  • 1 lemon, sliced
  • 1 Tbs mixed herbs
  • 1 small head broccoli, broken in to florets
  • 12 spears asparagus
  • 2 sweet potatoes, peeled and diced
  • 1 tsp butter

Instructions 

  1. Preheat oven to 350°. Prepare a baking sheet with a sheet of foil large enough to envelop a hake filet, forming a packet. Add cooking oil or fat, along with slices of lemon and mixed herbs.
  2. Fold the foil around the hake to create a packet, then bake it in the oven for 15 to 20 minutes, or until the fish is thoroughly cooked through.
  3. While the hake is baking, bring a small pot of water to boiling. Add sweet potato and cook for 7-10 minutes until the sweet potato is soft enough to pierce with a fork. Drain the water and mash the sweet potatoes with butter.
  4. For the vegetables, steam the asparagus and broccoli by placing in a steamer over pot with 1 inch boiling water. Bring the water to a simmer, cover, and let steam for 5 minutes until tender.
