Harissa Roasted Baby Potatoes

Ingredients 

  • 1 lb baby potatoes
  • 3 Tbs harissa paste
  • 1 tsp paprika
  • 1 tsp ground oregano
  • 1/2 tsp cayenne pepper (optional)

Instructions 

  1. Preheat oven or air fryer to 400°. 
  2. Bring a large pot of salted water to boiling. Add the potatoes and parboil for 8-10 minutes or just until they begin to soften, but still retain some firmness. Drain and set aside.
  3. In a large mixing bowl, combine the harissa paste, paprika, oregano and cayenne powder. Mix well.
  4. Add the parboiled potatoes to the bowl. Toss until they’re well-coated.
  5. Transfer the seasoned baby potatoes to a baking sheet or into the air fryer in a single layer, ensuring they’re not overcrowded. Roast for 15-20 minutes in the oven or air fryer or until they are golden brown and crispy, tossing halfway through for even cooking.
