
Harissa Roasted Baby Potatoes

Ingredients
- 1 lb baby potatoes
- 3 Tbs harissa paste
- 1 tsp paprika
- 1 tsp ground oregano
- 1/2 tsp cayenne pepper (optional)
Instructions
- Preheat oven or air fryer to 400°.
- Bring a large pot of salted water to boiling. Add the potatoes and parboil for 8-10 minutes or just until they begin to soften, but still retain some firmness. Drain and set aside.
- In a large mixing bowl, combine the harissa paste, paprika, oregano and cayenne powder. Mix well.
- Add the parboiled potatoes to the bowl. Toss until they’re well-coated.
- Transfer the seasoned baby potatoes to a baking sheet or into the air fryer in a single layer, ensuring they’re not overcrowded. Roast for 15-20 minutes in the oven or air fryer or until they are golden brown and crispy, tossing halfway through for even cooking.
