Ingredients
- 2 chicken breasts
- 1 tsp harissa paste
- 1 cup dry couscous
- 1 tsp paprika
- 1 pinch pepper
- 1/2 cup boiling water
- 1/2 cup pomegranate seeds
- 1/4 cup feta cheese, crumbled
Instructions
- Preheat the oven or an air fryer to 375 °.
- Coat the chicken breasts in harissa paste.
- Cook the chicken in an oven or air fryer for 18 minutes.
- Prepare the couscous. First, add the couscous, paprika, and black pepper to a pot or bowl. Then, add the 1/2 cup boiling water to the couscous mixture. Cover for 5 minutes.
- Once done, fluff the couscous using a fork. Serve the chicken on a bed of couscous with the pomegranate and feta on top.
