Ingredients 

  • 2 chicken breasts
  • 1 tsp harissa paste
  • 1 cup dry couscous
  • 1 tsp paprika
  • 1 pinch pepper
  • 1/2 cup boiling water
  • 1/2 cup pomegranate seeds
  • 1/4 cup feta cheese, crumbled

Instructions 

  1. Preheat the oven or an air fryer to 375 °.
  2. Coat the chicken breasts in harissa paste. 
  3. Cook the chicken in an oven or air fryer for 18 minutes.
  4. Prepare the couscous. First, add the couscous, paprika, and black pepper to a pot or bowl. Then, add the 1/2 cup boiling water to the couscous mixture. Cover for 5 minutes.
  5. Once done, fluff the couscous using a fork. Serve the chicken on a bed of couscous with the pomegranate and feta on top.
