Ingredients 

  • 1.5 lb fresh mussels 
  • 1 tsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup low-sodium vegetable broth
  • 1/4 cup white wine (optional, can replace with extra broth for a non-alcoholic version)
  • Fresh parsley, chopped for garnish
  • Salt and pepper to taste

Instructions 

  1. Clean the mussels by scrubbing the shells and removing the beards. Discard any mussels that are open and do not close when tapped.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the garlic and onion, sautéing until soft and translucent.
  3. Add the mussels, vegetable broth, and white wine (if using) to the pot. Cover and steam for about 5-7 minutes, or until the mussels have opened. Discard any that remain closed.
  4. Season with salt and pepper to taste and sprinkle with fresh parsley before serving.
