Ingredients
- 1.5 lb fresh mussels
- 1 tsp olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1/2 cup low-sodium vegetable broth
- 1/4 cup white wine (optional, can replace with extra broth for a non-alcoholic version)
- Fresh parsley, chopped for garnish
- Salt and pepper to taste
Instructions
- Clean the mussels by scrubbing the shells and removing the beards. Discard any mussels that are open and do not close when tapped.
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the garlic and onion, sautéing until soft and translucent.
- Add the mussels, vegetable broth, and white wine (if using) to the pot. Cover and steam for about 5-7 minutes, or until the mussels have opened. Discard any that remain closed.
- Season with salt and pepper to taste and sprinkle with fresh parsley before serving.
