Garlic Parmesan Roasted Potatoes

Ingredients 

  • 1/2 lb fingerling potatoes
  • 1 Tbs EVOO
  • 1 tsp salted butter
  • 8 garlic cloves, minced
  • 1/4 cup shredded parmesan cheese
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tsp dried oregano
  • 1/2 tsp dried parsley
  • 1/2 tsp red pepper flakes (optional)

Instructions 

  1. Preheat your oven or air fryer to 400 °.
  2. Was the potatoes thoroughly. Once cleaned, pat them dry.
  3. Toss the potatoes in a large bowl with EVOO, melted butter, minced garlic, parmesan, salt, pepper, oregano, parsley, and red pepper flakes. Ensure each potato is well-coated with the mixture.
  4. Transfer the seasoned potatoes to a baking sheet or place in the air fryer. Cook for 25 minutes in the oven or air fryer, mixing half way through the cooking time to ensure even browning.
  5. After 25 minutes, check the potatoes. They should be crispy on the outside and tender on the inside. If they’re not quite done, cook for a bit longer. 
  6. Once the potatoes are cooked to your liking, remove them from heat and enjoy!
