
Garlic Parmesan Roasted Potatoes

Ingredients
- 1/2 lb fingerling potatoes
- 1 Tbs EVOO
- 1 tsp salted butter
- 8 garlic cloves, minced
- 1/4 cup shredded parmesan cheese
- 1 pinch salt
- 1 pinch black pepper
- 1 tsp dried oregano
- 1/2 tsp dried parsley
- 1/2 tsp red pepper flakes (optional)
Instructions
- Preheat your oven or air fryer to 400 °.
- Was the potatoes thoroughly. Once cleaned, pat them dry.
- Toss the potatoes in a large bowl with EVOO, melted butter, minced garlic, parmesan, salt, pepper, oregano, parsley, and red pepper flakes. Ensure each potato is well-coated with the mixture.
- Transfer the seasoned potatoes to a baking sheet or place in the air fryer. Cook for 25 minutes in the oven or air fryer, mixing half way through the cooking time to ensure even browning.
- After 25 minutes, check the potatoes. They should be crispy on the outside and tender on the inside. If they’re not quite done, cook for a bit longer.
- Once the potatoes are cooked to your liking, remove them from heat and enjoy!
