Ingredients
- 1 Tbs cooking oil or fat
- 1 jalapeno
- 1 yellow onion, diced
- 2 cups shredded potatoes
- 2-3 handfuls of spinach
- 8 large eggs
- 1 cup 0% cottage cheese
- 1 red bell pepper, diced
- 1 pound ground turkey, cooked
- 1/2 cups shredded sharp cheddar cheese
- 1/2 cup grape tomatoes, quartered
- salt and pepper to taste, about 1/2 tsp each
Instructions
- Preheat the oven to 350°. Grease a 9x13 baking dish with cooking oil or fat.
- Dice up the onion + jalapeno and sauté in a pan with the oil or fat.
- Chop the spinach, set aside for now.
- Once the onions and jalapeño have started to brown, add in the shredded potatoes and sauté for 4-6 additional minutes, add in the spinach. Stir around for a minute or two, it won’t take long for the spinach to cook up.
- While the onions, jalapenos, and spinach are cooking, in a large bowl, whisk the eggs, cottage cheese, salt + pepper, and red bell pepper.
- Once the onion, jalapeño, spinach mixture is browned, add it into the large bowl with the egg mixture.
- Add the cooked turkey to the bowl
- Pour all the ingredients into the baking dish. Top with quartered tomatoes and shredded cheese
- Cook for 35 minutes in the oven.
