Egg Bake (Macro Perfect Variation)

Ingredients

  • 1 Tbs cooking oil or fat
  • 1 jalapeno 
  • 1 yellow onion, diced
  • 2 cups shredded potatoes
  • 2-3 handfuls of spinach
  • 8 large eggs 
  • 1 cup 0% cottage cheese
  • 1 red bell pepper, diced
  • 1 pound ground turkey, cooked
  • 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup grape tomatoes, quartered
  • salt and pepper to taste, about 1/2 tsp each

Instructions

  1.  Preheat the oven to 350°. Grease a 9x13 baking dish with cooking oil or fat.
  2. Dice up the onion + jalapeno and sauté in a pan with the oil or fat.
  3. Chop the spinach, set aside for now. 
  4. Once the onions and jalapeño have started to brown, add in the shredded potatoes and sauté for 4-6 additional minutes, add in the spinach. Stir around for a minute or two, it won’t take long for the spinach to cook up. 
  5. While the onions, jalapenos, and spinach are cooking, in a large bowl, whisk the eggs, cottage cheese, salt + pepper, and red bell pepper. 
  6. Once the onion, jalapeño, spinach mixture is browned, add it into the large bowl with the egg mixture. 
  7. Add the cooked turkey to the bowl
  8. Pour all the ingredients into the baking dish. Top with quartered tomatoes and shredded cheese
  9.  Cook for 35 minutes in the oven.
