
Deviled Eggs & Bacon

Ingredients
- 6 eggs
- 1 Tbs avocado or mayo (or 1 Tbs of each)
- 1 strip of bacon, cooked & finely chopped
- 1 Tbs sharp cheddar cheese, shredded
- salt and pepper to taste
- sprinkle of smoked paprika
- 1 Tbs lime juice (if using avocado)
Optional additions (not included in nutrition counts): finely chopped green onions, finely chopped bell peppers, finely chopped green onion
Instructions
- Start by boiling the eggs. Place the eggs in a medium sized pot and cover with cold water to about 1 inch above the eggs. Place the pot on high heat and bring to a rolling boil. Once boiling, turn off the heat and cover. Let sit for 10-12 minutes. Drain the water out and fill the pot with ice and cold water to stop the cooking.
- Peel the eggs.
- Slice the eggs in half, lengthwise, and remove the yolks into a medium bowl. Place egg white halves to the side.
- Mash the yolks with a fork and add avocado or mayo, 2/3 of the bacon chunks, cheese, and a pinch of salt and pepper. If using avocado, be sure to include the lime juice here to prevent browning.
- Mix until all ingredients are well combined.
- Transfer the filling into a ziplock bag, cut the corner off the bag, and pipe into the egg whites. Alternatively, you can spoon the mixture back into the egg whites.
- Sprinkle with the other 1/3 of bacon, smoked paprika, and other optional toppings.
