Classic Egg Muffins

Ingredients

  • 12 eggs
  • 1 cup 0% Cottage Cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Instructions

  1. Preheat oven to 350°.
  2. Line a 12-muffin baking pan with parchment muffin liners.
  3. In a large bowl, whisk together eggs with cottage cheese, salt, pepper, garlic, and onion powder. 
  4. In a large pan over medium heat, add cooking oil or fat of choice.
  5. Pour eggs into muffin tin until each muffin cup is 3/4 full.
  6. Bake the muffins for about 25-30 minutes or until set. Immediately remove from the pan to cool.
