Ingredients
- 1 tsp sesame oil
- 1 green onion
- 2 small white mushrooms
- 4 cherry tomatoes
- 1 cup spinach
- 1 Tbs soy sauce or coconut aminos
- 2 eggs
- 1/2 cup 0% cottage cheese
- crushed red pepper for garnish, to taste
Instructions
- Heat sesame oil in medium pan over medium heat.
- Add green onion (save some for garnish), white mushrooms, cherry tomatoes, and spinach. Sauté vegetables until they are soft and slightly caramelized.
- Pour in the soy sauce or coconut aminos and stir to mix with the vegetables.
- In a separate bowl, whisk the eggs with cottage cheese until well-beaten.
- Reduce heat to medium-low. Pour egg mixture into the pan with the veggies.
- Cook eggs, stirring and flipping occasionally. Cottage cheese will add additional water, so cook over low heat until water reduces and eggs are the desired consistency.
- Transfer to a plate and garnish with the remaining green onion and crushed red pepper.
- Serve immediately!
