Ingredients

Bowl Ingredients

  • 1 cup chopped cabbage
  • 2 green onion, chopped
  • 3 large carrot, shredded
  • 1 pound cooked chicken breast, cooked as desired 
  • 1 cup chopped red cabbage
  • 1 large red bell pepper, chopped
  • 1 cucumber, chopped
  • 1 handful cilanto, chopped
  • 1 pinch sesame seeds, for garnish
  • 1 pinch sunflower seeds, for garnish

 Satay Ingredients

  • 2 Tbs soy sauce or coconut aminos
  • 2 Tbs peanut butter
  • 1/2 tsp sriracha
  • 1 Tbs rice vinegar
  • 1/2 lime, juiced
  • 1/2 tsp sesame oil
  • 1 Tbs honey
  • 1 tsp fresh ginger, grated
  • 1 garlic clove, minced
  • 2 Tbs water

Instructions

  1. In a large bowl, add the cabbage, green onion, carrot, bell pepper, cucumber, and cilantro.
  2. Make the salad dressing. To a small bowl, add the soy sauce, peanut butter, sriracha, rice vinegar, lime juice, honey, ginger, garlic, and water. 
  3. Add dressing to the salad and mix well before transferring the salad to a bowl. 
  4. Top the salad with chicken, sesame, and sunflower seeds.
