Ingredients
Bowl Ingredients
- 1 cup chopped cabbage
- 2 green onion, chopped
- 3 large carrot, shredded
- 1 pound cooked chicken breast, cooked as desired
- 1 cup chopped red cabbage
- 1 large red bell pepper, chopped
- 1 cucumber, chopped
- 1 handful cilanto, chopped
- 1 pinch sesame seeds, for garnish
- 1 pinch sunflower seeds, for garnish
Satay Ingredients
- 2 Tbs soy sauce or coconut aminos
- 2 Tbs peanut butter
- 1/2 tsp sriracha
- 1 Tbs rice vinegar
- 1/2 lime, juiced
- 1/2 tsp sesame oil
- 1 Tbs honey
- 1 tsp fresh ginger, grated
- 1 garlic clove, minced
- 2 Tbs water
Instructions
- In a large bowl, add the cabbage, green onion, carrot, bell pepper, cucumber, and cilantro.
- Make the salad dressing. To a small bowl, add the soy sauce, peanut butter, sriracha, rice vinegar, lime juice, honey, ginger, garlic, and water.
- Add dressing to the salad and mix well before transferring the salad to a bowl.
- Top the salad with chicken, sesame, and sunflower seeds.
