Ingredients
Stir Fry Ingredients
- 1 lb raw chicken breasts, cut into strips
- salt and pepper, to taste
- 2 Tbs cooking oil or fat, divided
- 1 red bell pepper, sliced
- 1 red onion, chopped
- 1 small chili pepper, deseeded and chopped
- 2 cloves garlic, minced
- 2 Tbs ginger, grated
- 1 mango, peeled and cut into strips
- 2 cups cooked rice
Sauce Ingredients
- 3 Tbs rice vinegar
- 3 Tbs water
- 5 Tbs soy sauce or coconut aminos
- 2 Tbs honey
Instructions
- Season the chicken strips with salt and pepper.
- Mix all the sauce ingredients in a bowl.
- In a wok or large pan, heat 1 Tbs of oil, and stir fry the peppers, onions, chili pepper, garlic, and ginger over high heat for about 3 minutes. Add the mango and mix, cooking for another 2 minutes. Remove mixture from pan and set aside.
- Add the second Tbs of cooking oil to the pan and fry the chicken for about 3 minutes, stirring often.
- Place the mango and vegetables back in the pan. Add the sauce and mix well. Cook on high heat for about 3-5 minutes, mixing occasionally, until the sauce reduces slightly.
- Serve over rice.
