Chicken & Mango Stir Fry

Ingredients 

 Stir Fry Ingredients

  • 1 lb raw chicken breasts, cut into strips
  • salt and pepper, to taste
  • 2 Tbs cooking oil or fat, divided
  • 1 red bell pepper, sliced
  • 1 red onion, chopped
  • 1 small chili pepper, deseeded and chopped 
  • 2 cloves garlic, minced
  • 2 Tbs ginger, grated
  • 1 mango, peeled and cut into strips
  • 2 cups cooked rice

 Sauce Ingredients

  • 3 Tbs rice vinegar
  • 3 Tbs water
  • 5 Tbs soy sauce or coconut aminos
  • 2 Tbs honey

Instructions 

  1. Season the chicken strips with salt and pepper.
  2. Mix all the sauce ingredients in a bowl.
  3. In a wok or large pan, heat 1 Tbs of oil, and stir fry the peppers, onions, chili pepper, garlic, and ginger over high heat for about 3 minutes. Add the mango and mix, cooking for another 2 minutes. Remove mixture from pan and set aside. 
  4. Add the second Tbs of cooking oil to the pan and fry the chicken for about 3 minutes, stirring often.
  5. Place the mango and vegetables back in the pan. Add the sauce and mix well. Cook on high heat for about 3-5 minutes, mixing occasionally, until the sauce reduces slightly. 
  6. Serve over rice.
