Cajun Sweet Potato & Salmon

Ingredients

  • 2 salmon fillets
  • 2 large sweet potatoes
  • 2 Tbs + 2 tsp Cajun seasoning
  • 1 tsp cooking oil or fat of choice
  • Salt and black pepper, to taste

Instructions 

  1. Preheat the oven to 400°.
  2. Cut the sweet potato into 1-inch wedges. In a bowl, combine the wedges with cooking oil or fat, 2 Tbs Cajun seasoning, and a pinch of salt and pepper (to taste).
  3. Cook the sweet potato in the oven for 20 minutes, or until pierceble with a fork.
  4. While the wedges are baking, season the salmon filet with a pinch of black pepper and 1 tsp each of Cajun seasoning.
  5. Add the salmon to the oven and cook for 12 minutes.
