
Cajun Sweet Potato & Salmon

Ingredients
- 2 salmon fillets
- 2 large sweet potatoes
- 2 Tbs + 2 tsp Cajun seasoning
- 1 tsp cooking oil or fat of choice
- Salt and black pepper, to taste
Instructions
- Preheat the oven to 400°.
- Cut the sweet potato into 1-inch wedges. In a bowl, combine the wedges with cooking oil or fat, 2 Tbs Cajun seasoning, and a pinch of salt and pepper (to taste).
- Cook the sweet potato in the oven for 20 minutes, or until pierceble with a fork.
- While the wedges are baking, season the salmon filet with a pinch of black pepper and 1 tsp each of Cajun seasoning.
- Add the salmon to the oven and cook for 12 minutes.
