
Cajun Salmon & Quinoa Salad (Macro Perfect Variation)

Ingredients
- 2 salmon fillets (approx 4 oz each)
- 2 tsp Cajun seasoning
- 1/4 cup quinoa
- 1/2 cup water
- 12 cherry tomatoes, quartered
- 1 small red bell pepper, diced
- 1 cucumber, diced
- 1/2 cup sweet corn
- 2 green onions, sliced
- 3 Tbs Italian vinaigrette - see Italian Vinaigrette Recipe
Instructions
- Preheat an oven or air fryer to 400 °.
- Season the salmon with the Cajun seasoning and cook it in oven or air fryer for 12-14 minutes.
- Bring the 1/2 cup water to a boil, then add the quinoa. Cook on low-medium heat until the quinoa absorbs all of the water.
- In a medium bowl, combine the quinoa with the veggies and italian vinaigrette. Mix well.
- Serve the salmon with the salad.
