Cajun Salmon & Quinoa Salad (Macro Perfect Variation)

Ingredients 

  • 2 salmon fillets (approx 4 oz each)
  • 2 tsp Cajun seasoning
  • 1/4 cup quinoa
  • 1/2 cup water
  • 12 cherry tomatoes, quartered
  • 1 small red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 cup sweet corn
  • 2 green onions, sliced
  • 3 Tbs Italian vinaigrette - see Italian Vinaigrette Recipe

Instructions 

  1. Preheat an oven or air fryer to 400 °.
  2. Season the salmon with the Cajun seasoning and cook it in oven or air fryer for 12-14 minutes.
  3. Bring the 1/2 cup water to a boil, then add the quinoa. Cook on low-medium heat until the quinoa absorbs all of the water.
  4. In a medium bowl, combine the quinoa with the veggies and italian vinaigrette. Mix well.
  5. Serve the salmon with the salad. 

**To complete macros, serve with a side of 1 cup of roasted brussels sprouts or broccoli, or small baked sweet potato
