Ingredients
- 2 large red pepper, sliced into wedges
- 3 parsnip, sliced into wedges
- 4 large carrot, sliced into wedges
- 2 sweet potatoes, cubed
- 2 garlic cloves
- 2 Tbs Cajun seasoning, divided
- 2 tsp EVOO
- 2 tsp Italian seasoning
- 1/4 tsp salt
- pinch of black pepper
- 1 pound chicken breasts
Instructions
- Preheat the oven to 400 °.
- In a mixing bowl, add the sliced veggies, garlic, 1 Tbs of Cajun seasoning, the italian herbs, salt, pepper, and EVOO. Stir the mixture thoroughly to ensure the vegetables are well-coated. Once mixed, transfer the seasoned vegetables to a sheet pan.
- Cook for 35 to 40 minutes.
- As the vegetables are cooking, season the chicken breasts with the rest of the Cajun seasoning.
- Heat cooking oil or fat in a pan over medium heat. Add the chicken and cook for 5 to 6 minutes, or until cooked through and juices run clear. You can also cook the chicken in the air fryer at 375 ° for 16-18 minutes.
