Ingredients 

  • 1 cup cooked black beans (add variety by swapping for kidney beans & chickpeas) or ½ cup beans and ½ cup rice
  • 2-4 handfuls spinach 
  • 1 red bell pepper, sliced
  • 1/2 cup chopped tomatoes or salsa
  • 1/2 cup chopped red onion
  • 1 cup chopped nopales
  • 1/2 cup purple corn kernels
  • 1 avocado, sliced
  • 1/4 cup pepitas
  • 1 Tbs cilantro, chopped 
  • Chopped jalapeño (optional)
  • Salt and pepper to taste

Recommended Protein: 8oz ground beef for 2 servings (seasoned with taco spices) 

Instructions: 

  1.  Combine all ingredients and toss with the Southwest variation of apple cider vinaigrette dressing. 
  2. Top with seasoned ground beef.
