Ingredients
- 1 cup cooked black beans (add variety by swapping for kidney beans & chickpeas) or ½ cup beans and ½ cup rice
- 2-4 handfuls spinach
- 1 red bell pepper, sliced
- 1/2 cup chopped tomatoes or salsa
- 1/2 cup chopped red onion
- 1 cup chopped nopales
- 1/2 cup purple corn kernels
- 1 avocado, sliced
- 1/4 cup pepitas
- 1 Tbs cilantro, chopped
- Chopped jalapeño (optional)
- Salt and pepper to taste
Recommended Protein: 8oz ground beef for 2 servings (seasoned with taco spices)
Instructions:
- Combine all ingredients and toss with the Southwest variation of apple cider vinaigrette dressing.
- Top with seasoned ground beef.
