Ingredients
- 2-4 handfuls baby spring mix
- 1 cup chickpeas
- 1 cup fresh strawberries, sliced
- 1/2 cup dried blueberries
- 2 Tbs chopped walnuts
- 2 tsp. fresh orange zest
- Pickled red onions to garnish
Recommended Protein: 8 oz tinned or baked salmon for 2 servings
Instructions
- Combine all ingredients and toss with apple cider vinaigrette dressing. Top with salmon.
- Variation: pureé half of the fresh strawberries and whisk into dressing.
