Berry Spinach Walnut Salad Bowl

Ingredients

  • 2-4 handfuls baby spring mix
  • 1 cup chickpeas
  • 1 cup fresh strawberries, sliced
  • 1/2 cup dried blueberries
  • 2 Tbs chopped walnuts
  • 2 tsp. fresh orange zest
  • Pickled red onions to garnish

 Recommended Protein: 8 oz tinned or baked salmon for 2 servings 

Instructions 

  1.  Combine all ingredients and toss with apple cider vinaigrette dressing. Top with salmon. 
  2. Variation: pureé half of the fresh strawberries and whisk into dressing.
