
Beef & Cashew Stir Fry

Ingredients
- 1.5 lb beef, cut into thin strips
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 medium red onion, sliced
- 1/2 cup baby corn
- 1/2 cup sugar snap peas
- 2 bunches broccolini
- 5 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 1 small handful cashews
- 3 Tbs sweet chili sauce
- 3 Tbs oyster sauce
- 1 tsp + 1 Tbs sesame oil
- 2 tsp soy sauce or coconut aminos
- 1 pinch cayenne pepper
- 2 cups cooked white rice
Instructions
- Heat 1 tsp sesame oil in a large wok or skillet over medium high heat.
- Add the beef strips and cook until browned and cooked through. Remove beef from pan and set aside.
- In the same pan, toss in the chopped red and yellow peppers, red onion, baby corn, sugar snap peas, and broccolini. Stir fry the veggies until they are tender-crisp, about 5-7 minutes.
- Add the garlic, ginger, and cashews to the pan and stir to combine and cook for another minute until the garlic is fragrant.
- Return the cooked beef to the pan. Add in the sweet chili, oyster sauce, remaining sesame oil, soy sauce or coconut aminos, and dash of cayenne. Stir well to ensure all ingredients are coated.
- Cook for another 2-3 minutes until everything Is heated through. Serve on top of rice.
