
Beef & Black Bean Quesadilla

Ingredients
- 1 garlic clove, grated
- 1 tsp cooking oil or fat
- 1 Tbs cumin
- 1/2 tsp paprika
- 1 tsp oregano
- 3/4 lb ground beef
- 1 cup black beans, drained and rinsed
- 1.5 Tbs tomato paste
- 1 small avocado, sliced
- 4 (8-inch) tortillas
- 1/4 cup shredded cheddar cheese
Instructions
- Heat cooking oil or fat in a skillet over medium heat. Add the garlic and cook until fragrant. Add the ground beef, breaking up the beef with the back of a wooden spoon, and cook until browned. Add in oregano, cumin, and paprika. Mix well.
- Stir in the black beans and tomato paste. Cook for another 2-3 minutes, ensuring all the ingredients are well combined. If needed, add a splash of water.
- Spread half the tortilla with half of the beef and bean mixture. Layer the avocado slices over the beef, and sprinkle on half the cheese. Fold the tortilla in half, pressing it gently to secure the filling.
- Wipe the skillet clean and heat it over medium heat. Cook the quesadilla for about 2-3 minutes on each side, or until the tortilla is golden and the cheese has melted.
- Remove from the heat and let rest for a minute before cutting into wedges.
